① 1 pair of pig's kidney
② 20g. eucommia bark (Du Zhong); l 0g. fruit of Chinese wolfberry; 1 ginger
[Seasoning]
(A) 2 tbsp. wine; proper salt
[Methods]
①Cut kidney into halves; remove the membrane; score in a crisscross pattern and soak in water. Rinse kidney and then blanch in boiling water. Rinse herbage and drain. Slice ginger.
②Stew ingredient ② in 5 cups of water and then turn to low heat to stew for 1 hour after boiling; turn to high heat while putting kidney and seasoning (A) in to cook until boiling again.
